4. Add the diced potatoes and sauté for another 2-3 minutes until they start to turn golden.


5. Stir in 1/4 cup of peanuts and let them roast for 2-3 minutes until they become crunchy.


6. Now, add the soaked and drained barnyard millet and samo seeds. Sauté everything together for about 3-4 minutes.


7. Pour in 4 cups of water and add 1 teaspoon of rock salt. Mix well.


8. If using a pressure cooker, close the lid and cook on medium heat for 2 whistles. If using a heavy-bottomed pan, cover and cook until the millet and seeds are cooked through (about 15-20 minutes). Adjust water as needed.


Step 3: Finishing Touches

1. Once cooked, let the pressure release naturally or open the lid of the pan.


2. If the khichdi seems too thick, add a little hot water to achieve your desired consistency.


3. Squeeze in the juice of half a lemon for a zesty twist.


4. Garnish with a handful of fresh coriander leaves.
